Karen's Corner - Food and Wine Pairings

Below are some of our favorite food and wine pairing suggestions:

Spaghetti Carbona

Gold Coast Vineyard Chardonnay,

Dalla Gasperina Vineyard Sauvignon Blanc,

or Red Collar Rose'






This is the traditional preparation for carbona without cream. It's an easy recipe to prepare and delicious with a white or rose' wine with a crisp spine of acidity which cuts through the bacon.  This recipe serves 4 as an appetizer or 2 as a main course.

What you’ll need:
1/2 lb of spaghetti

1 cup bacon bits

1 medium sweet onion

1/2 stick butter 

1/2 cup percorino romano grated cheese

Chicken broth

To prepare:

  • In medium sauce pan melt half the butter and add finely chopped onions. Saute' until onions are transluscent.
  • Add in bacon bits and continue to saute' on low heat.
  • While cooking sauce, bring water up to a boil for the pasta. Add a teaspoon of salt to water.
  • Cook pasta to your taste (we like ours just a little al dente).
  • Drain pasta and add back to the pot.
  • Pour sauce on top of pasta and stir
  • Add remainder of butter.  
  • If pasta seems dry add a splash or two of chicken broth.
  • To finish add cheese on top, stir and plate.
